Pumpkin Chocolate Chip Cookies:


2 cups flour

2 eggs

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon nutmeg

1 teaspoon cinnamon

1 cup granulated sugar

2 tablespoons brown sugar

1/2 cup canola oil

1 cup canned pumpkin

1 teaspoon vanilla extract

1 cup chocolate chips

Preheat oven to 325 degrees. Mix the eggs and sugar together, and then add in the oil, pumpkin and vanilla extract. Mix until it is all blended together. Add in all the dry ingredients. Then add in the chocolate chips – white chocolate chips work, too, or you could even add in some nuts if you’re feeling particularly adventurous! Spray your baking sheets so the cookies don’t stick, and then bake them for about 10-15 minutes.
